Paul Flynn, Chef and Owner of The Tannery Restaurant in Dungarvan is renowned for cooking modern Irish food. The Tannery Townhouse opened in 2005 and in 2008 Paul opened The Tannery Cookery School and Garden, both of which are part of Ireland’s prestigious Bluebook.
In 2023, Paul released his book titled ‘Butter Boy’. Butter Boy is the complete collection of all 152 articles and over 450 recipes from Paul Flynn’s tenure as food writer for the Irish Times from November 2019 to October 2022.
Paul’s dishes are known and loved for their deep earthy flavours and the menus give nothing away in their simplicity yet the tastes are hugely exciting. Paul’s cooking career started out in London with Nico Ladenis working in all of his restaurants, becoming head chef at 23 at Chez Nico on Great Portland Street. He went on to take charge at Nico at Ninety in the Grosvenor House hotel, current site of Corrigans Mayfair.
Paul’s first eight-part TV series, Paul Flynn’s Irish Food Adventures aired on RTÉ One in 2011 and was a great success. Paul’s second series Surf ‘n’ Turf aired on RTÉ One. Paul was joined by Martin Shanahan where they visited eight beautiful locations around Ireland to create local signature dishes. They had 24 hours to source local produce before creating their unique dishes. They invited twenty people from the area to decide the winner. Paul served up the Turf while Martin created the Surf dish.
Paul is also part of the IFTA nominated show Lords & Ladles on RTÉ One with Derry Clarke and Catherine Fulvio. The series is based on a historical journey celebrating Ireland’s past through the wonders of food and the glories of cooking. Paul worked with Lidl Ireland for two series’ of The Taste of Success on RTÉ One. The series saw members of the public and local producers compete to get their food product on the shelves of Lidl Ireland.
In 2022, Paul hosted a new six part series, Paul Flynn’s Food Truck Favourites. The series aired on RTÉ One in July & August 2022. Each episode is based on an ingredient and then Paul travels the country finding food trucks serving up the episode’s ingredient.
Previously, he was the cookery writer for the Irish Times and subsequently wrote two cookery books, An Irish Adventure with Food(Food and Wine Cookbook of the Year 2003) and Second Helpings which contains a selection of spectacular recipes using seasonal food. Also following the success of the Surf n’Turf series, Martin and Paul’s Surf n’Turf by Martin Shanahan and Paul Flynn which was published by Quadrille was put together to share the recipes of the series. This book contains all those dishes plus a host more – 80 in all – divided into chapters on Starters & Soups, Salads, Quick, Slow & Easy, Comfort Food and Food to Impress.
Paul has been awarded many accolades throughout his career which include the coveted title of Georgina Campbell, Ireland Chef of the Year 2008, The Bridgestone Guide has awarded the Icon Award to The Tannery every year since 1997, Food & Wine Magazine for the Best Restaurant in Munster, Food and Wine Magazine Munster Chef of the Year, Hospitality Ireland Magazine, Best Restaurant in Ireland. Restaurant Association of Ireland Best Chef Munster, Restaurant Association of Ireland Best Restaurant Munster and most recently Restaurant Association Ireland Cookery School of the Year for 2010 and 2011. Paul was awarded the title Munster Chef of the Year at the annual FOOD & WINE Magazine Awards in August 2012.
