Mickael Viljanen is a 2 Michelin starred chef who is based in Ireland but originally hails from Finland. His cooking is inspired by his knowledge of quality ingredients born from his youth in the Finnish countryside, twinned with his classical background and artistic approach to modern French cuisine.
He started cooking at the age of 14 in his home city of Pori, Finland. At the age of 18, he moved to Ireland in 2000, after a short stint in the UK. He worked his way through the ranks at a number of restaurants including Paul Flynn's 'Tannery Restaurant'. In 2008, he took over the kitchen at Gregans Castle in the Burren, Co Clare. Here, he collected numerous accolades for his distinctive and powerful cuisine. These include "Irish Chef of the Year" from both Food and Wine Magazine, and the Restaurants Association of Ireland, as well as 'Restaurant of the Year'.
In 2012, he moved to Dublin to open 'The Greenhouse', where he worked as Executive chef. Under his stewardship, it has become one of Ireland’s most decorated restaurants. In 2015, Mickael received his first Michelin star. He has also won 'Food & Wine Chef of the year' on two occasions, as well as 'Georgina Campbell Chef of the Year' and 'Restaurant of the Year'.
In October 2019, Mickael received his second Michelin star, becoming the first new two Michelin starred chef in Ireland since 2000. Upon receiving these accolades, Michelin noted "The personality and talent of the chef is evident in expertly crafted dishes, which are refined, inspired and original'.
2021 saw Mickael moving on to the role of Chef Patron of the restaurant Chapter One by Mickael Viljanen. The restaurant entered the Michelin Guide with a 2 star rating just 6 months after opening. ‘Opinionated about Dining top 100’ (OAD top 100) placed Mickael and the restaurant team on 26th place in Europe for classical dining.
Other achievements include being listed at number 26 on the prestigious Opinionated About Dining (OAD) Top 100 in Europe.
His TV work has seen him appear as the guest judge on 'Masterchef Ireland'. Mickael has also judged global competitions, such as the San Pellegrino Young Chef of the Year 2018 in London. Mickael is the Brand Ambassador for Gaggenau.
Mickael has travelled intensively over the years, with work taking him to Asia, the USA, Scandinavia, the UK and beyond.He also has a keen interest in game and hunting.
